Piri-Piri Chicken & Chorizo Salad
Piri-Piri Chicken & Chorizo Salad is easy, light and tasty, bursting with delicious Mediterranean flavours. Piri-piri chicken and chorizo are typically Portuguese, and taste great with some mixed leaves, seared cherry tomatoes and olives. I like to use a griddle pan for my chicken to get some charred lines. Serve with some crusty bread, a drizzle of olive oil and a selection of olives.
In case you're wondering, the bread in the photo is Broa - a delicious traditional Portuguese cornmeal bread. If you ever get the chance to try it make sure you do, drizzled with olive oil. It's scrummy.
Piri-Piri Chicken & Chorizo Salad

Ingredients
300g chicken breast, diced
2 - 3 tablespoons ready made piri-piri sauce
100g chorizo, thinly sliced
100g mixed olives
200g bag salad
2 cloves garlic, sliced
300g cherry tomatoes
Olive oil, extra olives & crusty bread to serve
Method
Combine the chicken with the piri-piri and garlic. Set to one side.
Heat up a griddle pan and flash fry the chorizo for a few seconds from each side. Remove from pan.
In the same pan, fry the chicken until cooked through. The chorizo should leave a fair bit of grease in the pan so you shouldn't need any oil. Add the tomatoes to the pan half way through cooking the chicken to sear them.
While the chicken and tomatoes are cooking, layer the salad, chorizo and olives onto four plates. Top with the hot chicken and tomatoes. Drizzle with olive oil and enjoy.
