Mini Cheese and Basil Pancakes {Savoury Pancakes}
Mini Cheese and Basil Pancakes are really easy to make and are a great savoury snack for kids. They are great to make with kids and they are really quick. My two love making them and eating them. I thought the basil would be too strong for them, but they really like it.
They are actually so cute for kids parties stacked into little towers and can be made a day in advance. The batter will keep for a day or two in the fridge if you don't use it all. Check out this post for more pancake making tips.
Mini Cheese and Basil Pancakes

Ingredients:
- 85g self-raising flour
- 25g wholemeal flour
- 1/2 tsp baking powder
- 85ml milk
- 1 egg
- 20g finely grated parmesan cheese (or 25g mature cheddar)
- 1 tbsp finely chopped fresh basil or 1/2 tsp dried basil
- Sunflower oil for frying
Method:
- Sift the flour and then mix all the dry ingredients together in a bowl. Mix all the wet ingredients together in a jug.
- Make a well in the middle of the dry ingredients and pour in the wet ingredients. Using a whisk, carefully mix the liquid ingredients in the centre of the bowl incorporating a little of the flour as you go. Do not over-mix or your pancakes will be very tough. When the batter is just 'mixed' then stop.
- Heat a little oil in a pan and wipe away any excess with kitchen roll. Spoon a teaspoon of the pancake batter into the pan and use the spoon to carefully and quickly spread it into a small round circle approximately 6cm diameter. Depending on the size of your pan you will probably be able to make a few pancakes at a time. Cook for around 1 minute on each side on a medium heat until golden.
