Quick Escabeche-Style Mackerel
This Spanish-inspired Quick Escabeche-Style Mackerel is a fast and easy because it used canned mackerel. Traditional mackerel escabeche is made by frying and marinating fresh mackerel fillets in oil and vinegar.

Quick Escabeche-Style Mackerel

Ingredients:
- 1 tablespoon olive oil
- 1 small (or half a medium sized) red onion, sliced
- 1 small carrot, cut finely or shaved into ribbons with a peeler
- 1 garlic clove, crushed or chopped finely
- Good pinch of dried thyme
- 2 tablespoons red wine vinegar
- 1 x 125g can of Princes Mackerel in Spicy Tomato Sauce
- Fresh flat leaf parsley or rocket to garnish (optional)
